Meals

All meals will be provided and cooked by our local staff with choices for all diet types. It is your responsibility to inform us and monitor any allergies. A delicious dinner will be very traditional to the area with pit roasted local meat. Breakfast will offer a variety of items for a heavy or light start. Lunch will be another delicious local meal.

Northern New Mexican cuisine is unique to this area. This delicious food had adaptions and influences throughout its history and was developed in fairly isolated circumstances, which has allowed it to maintain its indigenous, Spanish, and Mexican identity, and is therefore not like any other food in the United States.  Common traditional dishes include red and green chile used in enchiladas, tacos, posole, tamales, burritos and tortillas. Enjoy pit roasted beef or pork, raised in the area, cooked outdoors at camp which you can help to prepare. We are dedicated to using local products whenever possible. Las Vegas has a thriving farmers’ market. All meals will include options for all diet types.

We have a fiesta planned for when you arrive.  A local music group will entertain you and the food will knock your socks off.

Cultural Experiences

Experience hands-on activities with local artisans whose families trace back to the 1600’s, such as weaving, a traditional herbalist, santero wood carver, Colcha textiles, potter, and hear storytellers weave stories about the past, teach you about cultural mores and so much more! You will experience different artisans each day with opportunity to participate hands-on.

Music

Enjoy a local musician who will play traditional music including corridos. The corrido is a traditional Mexican song style that has evolved over the past 200 years in northern Mexico and the southwestern United States. Corridos are all about storytelling. They tell of battle victories (and loses), individuals taking on the establishment, the lives of great or notorious people, and – perhaps the most ancient type of story in human history – the epic journey.
